The Best No-Mayo Potato Salad

Spring is officially here, abundant with fresh herbs and greens. So what better way to make the most out of these than making a divine potato salad which will leave everyone asking for the recipe!

Preparation Time: 30mins

Servings: 4

Ingredients:

  • 750gr baby potatoes
  • 2 scallions
  • 3-4 Asparagus
  • 4-5 radishes
  • 2 garlic cloves
  • Large handful of Basil
  • Large handful of Dill
  • 1.5 lemons 
  • 4tbsp olive oil
  • 1tsp mustard
  • Salt to taste

Instructions:

Step 1: Prepare the potatoes

Carefully wash the baby potatoes, cut in half and boil in a big pan filled with water for about 20 mins or until ready. Leave for 5-10 mins after ready to cool down.

Step 2: Herbs and dressing

Finely chop the scallions, radishes, dill and basil (I always chop the stems too – they have so much flavour, please don’t through them away). Chop the asparagus into approx. 1cm pieces and leave the greens to the side.

To prepare the dressing, juice the lemon and then add the olive oil, mustard and salt mixing everything well. 

Step 3: Mix it all up

Once the potatoes have cooled down, add the herbs, asparagus and radishes and then top everything with the dressing mixing well.
